    Ingredients
      

    • 1/4 cup rice
    • 1 can tuna
    • 1 egg
    • 2 tbsp quick oats
    • 1 tbsp soy sauce divided
    • 1/4 tsp onion powder
    • 1/4 tsp garlic powder
    • 1/4 tsp ginger
    • 1 tbsp whipped mayo
    • 1 tsp sriracha
    • 1 tsp lime juice
    • 2 cups coleslaw mix
    • 1/2 cucumber

    Directions
     

    1. Cook the rice according to package directions.
    2. In a bowl, mix tuna, egg, quick oats, 1/3 of the soy sauce (about 1 tsp per serving), onion powder, garlic powder, and ginger. Form into loose patties—it’s okay if they fall apart a bit! Heat a pan and cook patties 4–5 minutes per side, until lightly browned.
    3. Make the spicy mayo slaw: Mix whipped mayo, sriracha, and lime juice, then massage into the coleslaw mix.
    4. Dice the cucumber and set aside.
    5. Assemble the bowl: Start with a base of rice, top with spicy mayo slaw, diced cucumber, and a tuna patty. Drizzle with remaining soy sauce (~2 tsp per serving).
    6. Enjoy!

    Notes

    • Add green onions on top if you wish or a sprinkling of everything bagel seasoning.
    • To meal prep simply place everything into a container and add remaining soy sauce once it’s time to eat.
    • You can eat these cold or warm up the rice and tuna burger.
