A fun twist on a classic Caesar — no lettuce required.

Crisp-tender broccoli creates a hearty, fiber-rich base, topped with creamy Caesar dressing and juicy chicken. Homemade croutons made from whole-wheat bread add a satisfying crunch and an extra boost of whole grains to help support steady energy and blood sugar.

This is a salad that fuels your day — not one that leaves you hungry.

    Ingredients

    • 2 cups Broccoli chopped
    • 4 oz Cooked Chicken sliced or diced
    • 2 tbsp Caesar Dressing
    • 1 tbsp Parmesan Cheese
    • 1 slice Bread

    Directions

    1. Steam or roast the broccoli until tender-crisp, then let cool slightly.
To steam: Bring a small pot of water to a boil and add a steamer basket. Add the chopped broccoli, cover, and steam for 3–5 minutes until bright green and tender-crisp. Remove and let cool slightly before tossing with dressing.
To roast: Preheat the oven to 400°F. Toss chopped broccoli with a small drizzle of oil and a pinch of salt. Spread in a single layer on a baking sheet and roast for 12–15 minutes, flipping once, until lightly browned and tender. Let cool slightly before assembling the salad.
    2. Toss the broccoli with Caesar dressing and Parmesan cheese until well coated.
    3. Add the chicken and gently mix to combine.
    4. Toast the bread until golden and crisp using a toaster, toaster oven, or skillet. Let cool, then cut into small bite-sized squares. Sprinkle directly over the salad just before serving for maximum crunch.
    5. Enjoy immediately, or store for later.

    Notes

    1. This salad holds up well for meal prep, just store croutons separately for the best texture.
    2. Roasting the broccoli adds a deeper, slightly nutty flavor, while steaming keeps it lighter and fresher.
    3. Feel free to add lemon juice, black pepper, or extra Parmesan to taste.
