    Ingredients
      

    • 1 medium zucchini ¼ of it shredded, remainder sliced into ¼” slices
    • ¼ lb ground turkey
    • 1 tsp Worcestershire sauce
    • ¼ tsp garlic powder
    • ¼ tsp onion powder
    • Dash of salt
    • ½ cup cherry tomatoes
    • ½ tsp olive oil
    • 2 tsp grated Parmesan cheese
    • ¼ cup dry couscous

    Directions
     

    1. Preheat the oven to 400°F. Line a baking sheet with foil and spray with non-stick spray.
    2. In a bowl, mix the shredded zucchini from ¼ of the zucchini (reserving the rest to slice), ground turkey, Worcestershire sauce, garlic powder, onion powder, and a dash of salt, if desired.
    3. Form into ~2 tbsp (about golf ball sized) meatballs and place them on the prepared baking sheet.
    4. Add the sliced zucchini and cherry tomatoes to the baking sheet. Drizzle with olive oil and sprinkle with Parmesan cheese.
    5. Bake for 25 minutes, or until the meatballs are cooked through and zucchini is golden.
    6. Meanwhile, cook couscous according to package directions (typically takes about 5 minutes after boiling).
    7. Plate it up with the meatballs, roasted zucchini, and couscous. Enjoy!

    Notes

    • Broil for the last 2–3 minutes if you want crispy edges on your zucchini or meatballs.
    • This recipe is easy to double, triple or more!
