Add ice, the Greek yogurt, protein powder, date, and cocoa powder to a blender and begin blending until the mixture starts to come together.
Add the xanthan gum if desired to help thicken the smoothie and reduce melting.
Continue blending for 2 to 5 minutes, depending on the strength of your blender, until the mixture is completely smooth.
Pour the smoothie into a glass and top with the peanut butter and chopped peanuts.
