Ingredients
  

  • 1-2 cups ice
  • ½ cup plain non-fat Greek yogurt
  • 1 scoop chocolate protein powder
  • 1 date
  • 1 tbsp cocoa powder
  • tsp xanthan gum optional for thickness/reduced melting
  • 1 tbsp peanut butter
  • 2 tbsp peanuts chopped

Directions
 

  1. Add ice, the Greek yogurt, protein powder, date, and cocoa powder to a blender and begin blending until the mixture starts to come together.
  2. Add the xanthan gum if desired to help thicken the smoothie and reduce melting.
  3. Continue blending for 2 to 5 minutes, depending on the strength of your blender, until the mixture is completely smooth.
  4. Pour the smoothie into a glass and top with the peanut butter and chopped peanuts.
  5. If you prefer extra hydration, blend in an additional cup of ice before serving. Enjoy!

Notes

  • Substitute cottage cheese for the Greek yogurt if desired.
  • Use vanilla or another flavor of protein powder in place of chocolate.
  • If you don’t have a date, use ½ of a frozen banana instead.
  • Any nut or seed butter can replace the peanut butter depending on preference or dietary needs.
