Inspired by the famous chocolate, coconut, caramel Girl Scout Cookie these easy overnight oats are sure to bring a breakfast time smile to your face!

A surprise veggie boost (by way of shredded zucchini!) mimics the texture of the shredded coconut that is swimming in creamy, chocolatey oats with a caramel-y chopped date.

Make them extra coconut-y by adding a few drops of extract, if desired. You get to decide the way this cookie crumbles… or rather, the way these oats float!

  1. In a jar or bowl, combine oats, water, yogurt, protein & cocoa powder. Stir well.
  2. Add shredded zucchini and coconut. If desired, you can add a few drops of coconut extract for extra flavor. Stir to evenly distribute.Top with chopped date.
  3. Cover and refrigerate for at least 2 hours or overnight.
  4. Grab and enjoy!

Notes

  • Scale the recipe up to make multiple servings for meal prep.
  • Prepared oats will keep in the fridge for up to 5 days.
  • May sub vanilla protein powder but you may want to add an extra tbsp of cocoa powder.
  • May sub quick oats for old fashioned. They will be ready sooner (~30 min to 1 hr) and have a smoother texture.
  • Try a dash of cinnamon for warm spiced flair.
