- In a small bowl, mash the avocado until mostly smooth. Stir in 1/4 cup Greek yogurt until creamy.
- Lay roast beef slices flat on a clean surface or plate.
- Evenly spread the avocado-yogurt mixture across each slice of roast beef.
- Top them evenly with cooked rice, shredded lettuce, and matchstick carrots, dividing ingredients evenly.
- Roll each slice tightly to form spring-roll style wraps. Stick a toothpick in them to hold, if needed/desired.
- In a separate bowl, mix the remaining 1/4 cup Greek yogurt with hoisin sauce to create a creamy dipping sauce. Thin with a small splash of water if needed.
- Serve spring rolls with dipping sauce on the side. Enjoy!
Notes
- Use extra spices in your Greek yogurt if desired (like garlic or herb) for extra depth.
- Works well with turkey or chicken if roast beef isnβt available.
- Add more hoisin for sweetness or a squeeze of lime juice for brightness.
- A dash of soy sauce or tamari can also deepen flavor.
- Pat lettuce and carrots dry before assembling to prevent soggy rolls.
- Spice it up by stirring sriracha, chili garlic sauce, or red pepper flakes into the dipping sauce.
