Ingredients
Directions
- Combine coleslaw mix with yogurt, sugar and vinegar. Add salt and pepper if desired. Ideally, let this sit for a few hours, if able (great to meal prep at the beginning of the week!)
- Assemble your sandwich by topping 1 slice of bread with the coleslaw (as much as will fit, enjoy the remainder on the side) followed by turkey and cheese. Spread the Thousand Island dressing on the remaining slice of bread and place dressing side down to top off the sandwich.
- Spread half of the mayo on the outside of one slice of bread. Place that side down on a hot skillet over medium heat. Cook for 2-3 minutes, flip, and spread the remaining mayo on the second side of the bread. Cook for an additional 2-3 minutes or until the bread is golden brown and the cheese is melted.
- Remove from the skillet, slice in half if desired, and serve warm with a side of pickle spears. Enjoy!
Notes
- If you have a panini press, use it to achieve a perfectly crispy and evenly toasted sandwich. Or? Skip the cooking and enjoy cold!
