- Mix together pancake mix, protein shake, egg, pumpkin puree, and pumpkin spice until smooth.
- For a single serving: Cook right in a cereal-sized bowl in the microwave for about 2½ minutes (no need for cooking spray).
- For meal prep: divide the batter into sprayed single-serve containers or use a muffin tin (makes about 3–4 muffins per serving) and bake at 350°F for 20–25 minutes, until set.
- In a separate bowl, mix Greek yogurt and maple syrup.
- When ready to eat, top your pancake bowl (or muffins) with the yogurt mixture and sprinkle with walnuts. Enjoy warm or cold!
Notes
- Protein Drink: ready to drink, 2 oz = ¼ cup, may sub ~¼ scoop protein powder mixed with ¼ cup water
- Swap the pumpkin puree for mashed banana or applesauce if you’re switching up the season.
- Great for meal prep (muffin or full bowl style)—store in the fridge for up to 5 days! To reheat simply pop in the microwave without Greek yogurt topping. Once heated, add topping and enjoy!
