    Ingredients
      

    • 2 Tbsp dry white rice
    • ½ cup chicken broth divided
    • 1 cup frozen cauliflower rice
    • 1 cup raw broccoli chopped
    • 1 tsp olive oil
    • 4 oz chicken cut into small bite-sized pieces
    • 1 Tbsp BBQ sauce
    • 1 Tbsp orange marmalade

    Directions
     

    1. In a small saucepan, combine the rice, frozen cauliflower rice, and ¼ cup chicken broth. Bring to a gentle boil, cover, reduce heat to low, and simmer for 10–12 minutes until rice is tender and most liquid is absorbed. If needed, uncover for 1–2 minutes to evaporate extra moisture.
    2. While rice simmers, steam the broccoli in a small basket over the rice pan or microwave 2–3 minutes until bright green and just tender.
    3. Heat olive oil in a skillet over medium heat. Add chicken pieces and cook 3–4 minutes, stirring occasionally, until lightly browned.
    4. Stir in BBQ sauce and orange marmalade immediately. Add the remaining ¼ cup chicken broth, a splash at a time, and simmer 1–2 minutes until the sauce is glossy and lightly thickened.
    5. Serve the 15-Min Orange Chicken over the rice and cauliflower rice mixture with steamed broccoli on the side.

    Notes

    • Frozen, steamable broccoli is a great shortcut and money saver.
    • Instant rice makes for an even quicker meal.
    • If making in advance for meal prep you can either store items separately or place them all into a single container for no-fuss reheating!
    • Top with sesame seeds and/or green onion for extra flair.
