Directions
- Prepare frozen cauliflower rice according to package directions. Once cooked, stir in taco seasoning until evenly coated.
- Roast the corn (optional): Preheat a skillet or oven. If using a skillet, cook the corn over medium-high heat for 5–7 minutes until lightly browned and fragrant. If using an oven, spread corn on a baking sheet and roast at 400°F (200°C) for 10–15 minutes, shaking halfway through.
- Warm chicken and beans (optional): Heat chicken and black beans in a skillet or microwave until warmed through.
- To assemble your bowl, layer the taco cauliflower rice first, then top with cottage cheese, black beans, roasted corn, chicken, cotija cheese, lime juice, and crushed tortilla chips.
- Serve and enjoy!
Notes
- May add rice or more tortilla chips to the bowl, if you wish.
- Add any additional herbs or spices such as cilantro or green onions.
- Meal prep notes: Divide the cooked cauliflower rice, chicken, black beans, and roasted corn into meal prep containers. Top each with cottage cheese, cotija cheese, and a squeeze of lime juice, and store in the fridge for up to ~5 days. Keep crushed tortilla chips separate to add just before eating. Bowls can be enjoyed warm or cold.
