This version keeps all the fun of his daring ingredient combos (that TOTALLY work!) while adding a nutrient-rich boost and balancing your macronutrients so it’s as nourishing as it is tasty.

- In a medium bowl, mix together the tuna, Greek yogurt, mustard, apple cider vinegar, and lemon juice until creamy.
- Fold in the chopped egg, onion, celery, apple, corn, peas, pickles, and crispy jalapeños. Give it a taste and adjust anything you like.
- Serve with whole-wheat crackers and spoon into romaine leaves for crunchy “boats.”
Notes
- Can be prepped in advance and stored in the fridge for 3-5 days.
- Try bread and butter pickles for a little extra sweetness.
- Any type of apple will work, Granny smith will give a tangier flavor while gala will give sweeter.
- Swap regular mustard for dijon for extra flavor.
