    Ingredients
      

    • 3 oz Ground Beef
    • ¼ tsp Onion Powder
    • ¼ tsp Garlic Powder
    • ¼ tsp Oregano
    • tsp Paprika
    • ¼ cup Plain Greek Yogurt
    • ½ Cucumber
    • 1 tsp Lemon Juice
    • 1 tsp Minced Garlic
    • ½ tsp Dill dried or fresh
    • ¼ cup Rice if using minute rice you’ll need ½ cup
    • ½ cup Cherry Tomatoes sliced in half
    • 1 Red Onion
    • 2 cups Lettuce shredded
    • 2 tbsp Feta Cheese

    Directions
     

    1. In a small bowl, combine ground beef with onion powder, garlic powder, oregano, and paprika. Mix well.
    2. Place the beef between two sheets of parchment paper and roll it out to about ¼-inch thickness. Remove the top sheet, then roll the beef into a log using the bottom parchment. Transfer to a baking sheet and bake at 400°F for 15–20 minutes, until cooked through.
    3. Prepare rice according to package directions.
    4. Finely chop half of the cucumber. In a bowl, combine it with Greek yogurt, lemon juice, minced garlic, and dill. Mix well and set aside.
    5. Dice the remaining cucumber and add it to a bowl with lettuce, cherry tomatoes, and red onion.
    6. Once cooked, remove the beef from the oven, unroll, and slice into strips. Optionally, return slices to the oven for a few minutes or broil briefly for crisp edges.
    7. Add rice to your bowl, then top with veggies, sliced beef, and feta. Drizzle with tzatziki sauce and enjoy.

    Notes

    • Skip the baking method and cook the beef in a skillet over medium heat, breaking it apart as it browns until fully cooked (about 5–7 minutes) for a more traditional, crumbled gyro-style texture.
    • Swap the individual spices for ½–1 tsp of a Mediterranean or Greek seasoning blend.
    • Add olives, hummus, or warm pita on the side for extra flavor and texture.
