Fresh Cherry Tomato Spaghetti is a quick, no-fuss meal that comes together in about 20 minutes, making it perfect for busy days when you still want something satisfying.

Juicy cherry tomatoes and garlic create a simple, flavorful sauce without needing anything complicated. Using whole wheat pasta adds fiber, which helps keep you feeling full and supports more stable blood sugar. The tomatoes also contribute fiber and nutrients, adding to the staying power of this dish.

    Directions

    1. Bring a pot of salted water to a boil and cook the whole wheat spaghetti according to package directions until al dente, reserving a splash of pasta water before draining.
    2. Heat olive oil in a skillet over medium heat, add the chicken, and cook for 4–5 minutes until cooked through, then remove from the pan and set aside.
    3. In the same skillet, add minced garlic and cook for about 30 seconds until fragrant, then add cherry tomatoes and Italian seasoning and cook for 5–7 minutes until the tomatoes soften and release their juices.
    4. Return the chicken to the skillet, add the cooked pasta, and toss to combine, adding a small splash of reserved pasta water if needed.
    5. Remove from heat, stir in fresh basil, and top with Parmesan cheese before serving.

    Notes

    • Red pepper flakes can be added with the garlic for a little heat.
    • May sub canned stewed or diced tomatoes in place of fresh cherry tomatoes, if desired. Your cooking time may reduce slightly.
    • Any pasta shape you enjoy works well in this recipe.
    • Meal Prep Tips: Pasta can be cooked and stored separately from the chicken and tomato sauce to prevent it from soaking up too much liquid. Everything can also be stored together if you prefer a softer pasta texture. Add basil and Parmesan after reheating for the best flavor.
