Chocolate Gingerbread Pancake Bowl

Cozy spices and bold molasses get mixed into an easy to make microwave pancake bowl. Adding whipped cream cheese and a chopped, caramel-y flavored date on top you’ll feel like you’re enjoying a nutrient rich cake!

- In a cereal sized bowl mix together pancake mix, cocoa powder, ginger, cinnamon and nutmeg.
- Then, add your wet ingredients: ¼ cup of the protein shake per serving, egg and molasses. Mix well.
- Microwave for ~2-3 minutes until set.
- Top with whipped cream cheese, chopped date and enjoy with the remainder on the protein shake on the side!
Notes
- You can meal prep this by cooking in advance and enjoying cold or reheating in the microwave.
- You may bake these in the oven as well. We like to pour the batter into a muffin tin and make 3 muffins per serving and bake for 20 minutes at 350°F.
- You may sub honey or maple syrup or omit the molasses (but will taste less gingerbread-y!)
