Super easy, super comforting, zero stress. This Crockpot Chicken French dip is high-protein, high-flavor, and low effort thanks to a soup-mix shortcut that does the heavy lifting for you. 

We keep things simple with sliced bread (because that’s real life), but feel free to grab a fancy bun if that sparks joy.

    Ingredients
      

    • ½ Onion sliced
    • ¼ cup Chicken Broth
    • 1 tbsp Onion Soup Mix
    • 4 oz Chicken
    • 2 slices Bread
    • ½ oz Provolone Cheese
    • 1 cup Brussels sprouts
    • 1 tsp Butter

    Directions
     

    1. Add the sliced onion, chicken broth, and onion soup mix to your crockpot and stir to combine.
    2. Place the chicken on top of the mixture. Cover and cook on low for 6–8 hours or high for 3–4 hours, until the chicken is tender and shreds easily.
    3. Shred the chicken using two forks. Then, working in spoonfuls, gently press the shredded chicken against the side of the crockpot to release excess liquid. Transfer the drained chicken to a plate and repeat until all the chicken is done. You’ll be left with a small but very flavorful amount of juice (about 2 tbsp per serving). Pour this into a small bowl and set aside.
    4. Return the chicken to the crockpot, top with provolone, cover, and cook on high just until the cheese melts (usually just a few minutes).
    5. Steam the Brussels sprouts for 5–7 minutes, just until fork-tender but not mushy. You can also roast or sauté them if you prefer. Once cooked, top with butter and a pinch of salt if desired.
    6. Lightly toast the bread first to help prevent sogginess, then top with the cheesy chicken.
    7. Add a splash of broth or water to the reserved juice if needed and warm it in the microwave if desired. Cut your sandwich in half and serve with the dipping juice on the side.
    8. Serve with the buttery Brussels sprouts and enjoy a cozy, comforting meal with minimal effort.

    Notes

    • Cheese swap: Provolone works great, but Swiss or mozzarella are delicious too.
    • Meal prep friendly: Store the chicken and juice separately in airtight containers. You can put the cheese right on top in the container as well so that when you reheat it gets melty. Reheat chicken gently in the microwave or over the stove, toast bread fresh, and warm the juice before serving.
    • Extra flair: Sprinkle with fresh parsley if you’re feeling fancy.
    • Bread options: Whole-wheat keeps fiber high, but any bread or bun you love will work.
