    1. Preheat oven to 375 degree F and spray a muffin tin very well with non-stick spray
    2. Cut your tortilla into thirds starting from the center (so you get triangle shaped pieces)
    3. Place each tortilla piece into one of the muffin wells, folding down any pieces into the tin as necessary and trying to cover as much as possible (this is your quiche “crust”!) be sure to press them down very well so they take up as little room as possible.
    4. Blend together the eggs, cottage cheese and cornstarch. Then, fold in the cheese and add any other spices or herbs you wish (salt, pepper, garlic powder, chives, etc)
    5. Pour your egg mixture into the tortilla lined muffin tin (it’ll fill them all the way up!)
    6. Bake for 22-25 minutes or until eggs are set.
    7. Remove from the oven, allow to cool and enjoy in the moment with a side of grapes or reserve for later!

    Notes

    • Feel free to swap the cheddar for your cheese of choice.
    • Cornstarch can be left out but your eggs may not become as firm.
    • This recipe will fill your entire muffin well, so be careful if you do add any veggies or other ingredients into the eggs as they may overflow.
    • These can be made without the tortilla but would recommend adding a side of toast to replace the carbohydrates.
