    Ingredients
      

    • 4 oz ground chicken
    • 1 tsp olive oil
    • 1 small sweet potato diced
    • 3 cups iceberg salad mix
    • ¼ cup plain Greek yogurt
    • 1 tbsp buffalo sauce
    • 3 tbsp blue cheese

    Directions
     

    1. Heat a pan over medium heat and spray with nonstick spray. Add ground chicken and cook, breaking it apart with a spatula, until browned and cooked through—about 6–8 minutes. Season with salt, pepper, garlic powder, or onion powder if desired.
    2. Toss the diced sweet potato with olive oil and cook with desired menthod. Air fryer: Cook at 375°F for 10–15 minutes, shaking halfway. Oven: Bake at 400°F for 20–25 minutes until tender and lightly crisp.
    3. Microwave option: Place diced sweet potato in a microwave-safe bowl with 1–2 tablespoons water, cover, and microwave 4–6 minutes until soft.
    4. In a small bowl, mix Greek yogurt and buffalo sauce to create the creamy buffalo dressing.
    5. Assemble your bowl with lettuce, cooked chicken, sweet potatoes, and blue cheese. Drizzle with the buffalo yogurt sauce. Enjoy warm or cold!

    Notes

    • For meal prep: scale up ingredients to desired servings.
    • Cook the chicken and potatoes ahead of time.
    • Assemble bowls but keep the buffalo yogurt dressing stored separately until serving.
