- Heat a pan over medium heat and spray with nonstick spray. Add ground chicken and cook, breaking it apart with a spatula, until browned and cooked through—about 6–8 minutes. Season with salt, pepper, garlic powder, or onion powder if desired.
- Toss the diced sweet potato with olive oil and cook with desired menthod. Air fryer: Cook at 375°F for 10–15 minutes, shaking halfway. Oven: Bake at 400°F for 20–25 minutes until tender and lightly crisp.
- Microwave option: Place diced sweet potato in a microwave-safe bowl with 1–2 tablespoons water, cover, and microwave 4–6 minutes until soft.
- In a small bowl, mix Greek yogurt and buffalo sauce to create the creamy buffalo dressing.
- Assemble your bowl with lettuce, cooked chicken, sweet potatoes, and blue cheese. Drizzle with the buffalo yogurt sauce. Enjoy warm or cold!
