Ham & Cheese Breakfast Quesadilla

Ingredients

- In a small bowl, whisk the egg with cottage cheese until well combined. Season with salt and pepper if desired.
- Heat a nonstick skillet over medium heat. Add diced ham followed by the egg mixture into the skillet, spreading evenly.
- Place the tortilla directly on top of the eggs and cook for 2–3 minutes, until the eggs are mostly set and attached to the tortilla.
- Carefully flip the egg and tortilla together so the tortilla is on the bottom.
- Sprinkle cheddar cheese over one half of the egg side. Fold the quesadilla in half.
- Cook for about 2 minutes per side, until the tortilla is golden and crisp and the cheese is melted.
- Remove from heat and serve with sliced apple.
Notes
- Dice or shred the apple and add it to the skillet with the ham for a sweet-savory flavor combo.
- Swiss, Colby Jack, or mozzarella all work well.
- Pair with hot sauce, salsa, or Dijon mustard for extra flavor.
