- In a medium microwave-safe bowl, whisk together eggs, 1/4 cup of the yogurt, sugar, vanilla, and cinnamon.
- Chop the bread into 1” cubes and add to the bowl. Gently stir until all pieces are coated. Let sit for 2 to 3 minutes so the bread can absorb the mixture.
- Microwave for 2 1/2 to 3 1/2 minutes, or until the eggs are set and the center is cooked through.
- Top with the remaining yogurt and mixed berries. Serve warm and enjoy.
Notes
- Most types of bread will work. Slightly stale bread works especially well because it soaks up the custard mixture beautifully.
- Adjust sugar depending on how sweet your yogurt and berries are.
- Microwave tip: Start with less time and add more as needed.
- Air Fryer: Prepare mixture in an air fryer-safe ramekin or dish. Cook at 350°F for 8 to 10 minutes, until set in the center.
- Oven: Bake in an oven-safe dish at 375°F for 15 to 20 minutes, until golden and cooked through.
- Swap berries for bananas, peaches, or apples.
