    Ingredients
      

    • ½ Sweet Potato peeled and diced
    • 1 Carrot peeled and diced
    • 1 tsp Olive Oil
    • 4 oz Ground Beef
    • 1 tsp Taco Seasoning or preferred seasoning for beef
    • ½ cup Cottage Cheese
    • ¼ Avocado diced
    • 1 tsp Hot Honey

    Directions
     

    1. Roast the Veggies:
      Oven option: Preheat the oven to 400°F. Toss the sweet potato and carrot with 1 teaspoon oil, then spread them in a single layer on a baking sheet. Roast for 20–25 minutes, flipping halfway through, until tender and lightly caramelized.
      Air fryer option: Toss the sweet potato and carrot with 1 teaspoon oil and air fry at 375°F for 15–18 minutes, shaking the basket halfway through, until tender and golden.
    2. While the veggies cook, heat a skillet over medium heat and cook the ground beef until fully browned, about 5-7 minutes. Add taco seasoning (or your preferred seasoning) along with a small splash of water if needed. Stir and cook until everything is evenly coated and fragrant.
    3. Add the roasted sweet potatoes and carrots to a bowl, then top with the seasoned beef, cottage cheese, and avocado. Drizzle with hot honey, if desired, and enjoy!

    Notes

    • Customize the seasoning: Taco seasoning adds a crowd-pleasing flavor, but this bowl also works well with garlic powder, smoked paprika, chili powder, or even everything-but-the-bagel seasoning.
    • Cottage cheese tips: If texture is a concern, try lightly mashing or stirring it before adding to the bowl. May also sub Greek yogurt for a similar nutrition profile and creamy addition.
    • This works great for meal prep! It can be stored all together and eaten cold or you can store the beef and veggies together to warm then add to the cottage cheese, avocado and hot honey.
