- In a small bowl, combine ground beef with onion powder, garlic powder, oregano, and paprika. Mix well.
- Place the beef between two sheets of parchment paper and roll it out to about ¼-inch thickness. Remove the top sheet, then roll the beef into a log using the bottom parchment. Transfer to a baking sheet and bake at 400°F for 15–20 minutes, until cooked through.
- Prepare rice according to package directions.
- Finely chop half of the cucumber. In a bowl, combine it with Greek yogurt, lemon juice, minced garlic, and dill. Mix well and set aside.
- Dice the remaining cucumber and add it to a bowl with lettuce, cherry tomatoes, and red onion.
- Once cooked, remove the beef from the oven, unroll, and slice into strips. Optionally, return slices to the oven for a few minutes or broil briefly for crisp edges.
- Add rice to your bowl, then top with veggies, sliced beef, and feta. Drizzle with tzatziki sauce and enjoy.
Notes
- Skip the baking method and cook the beef in a skillet over medium heat, breaking it apart as it browns until fully cooked (about 5–7 minutes) for a more traditional, crumbled gyro-style texture.
- Swap the individual spices for ½–1 tsp of a Mediterranean or Greek seasoning blend.
- Add olives, hummus, or warm pita on the side for extra flavor and texture.
