- Preheat oven to 400°F.
- In a bowl, add the kale and apple cider vinegar. Massage with your hands for about 1 to 2 minutes until slightly softened and darker in color.
- Place the tortilla on a baking sheet. Spread Caesar dressing evenly over the top.
- Add the chicken, a handful of kale, and the parmesan cheese. Place remaining kale onto a baking sheet to cook on the side, add salt and pepper if desired.
- Bake for about 8 to 12 minutes, until the tortilla is crispy and the kale on top is slightly wilted.
Notes
- Rotisserie chicken works great here for an easy shortcut.
- If you like extra crunch, broil for the last 1 to 2 minutes but keep an eye on it.
- Add a squeeze of lemon after baking for a bright fresh finish.
- Swap kale for romaine if you want a more classic Caesar vibe, we’d recommend adding this after cooking so it doesn’t get soggy.
- This is best eaten fresh while the tortilla is still crispy.
