Directions
- Place frozen berries in a microwave-safe bowl and heat for 2 minutes. Mash with a fork (it’s okay if they’re still a little frozen).
- Stir in cornstarch and half of the protein powder.
- In a separate bowl, mix oats, yogurt, remaining protein powder, maple syrup, and peanut butter.
- Spoon oat mixture over the berries to create the “cobbler” topping.
- Microwave for another 2 minutes.
- Let cool slightly and enjoy!
Notes
- Add a sprinkle of cinnamon or a dash of vanilla to the topping for extra flavor.
- This works well with any frozen fruit like peaches, cherries, or blueberries.
- To meal prep: make as directed then store in the fridge. When you’re ready to eat, enjoy warm or cold!
