    Ingredients
      

    • 3 oz Chicken rotisserie chicken works great!
    • 0.66 cup Cauliflower Rice
    • 1 tsp Taco Seasoning
    • 1/2 cup Cottage Cheese
    • 0.66 cup Corn
    • 0.25 cup Black Beans
    • 0.5 oz Cotija Cheese
    • 1 tsp Lime Juice
    • 1/2 oz Tortilla Chips

    Directions
     

    1. Prepare frozen cauliflower rice according to package directions. Once cooked, stir in taco seasoning until evenly coated.
    2. Roast the corn (optional): Preheat a skillet or oven. If using a skillet, cook the corn over medium-high heat for 5–7 minutes until lightly browned and fragrant. If using an oven, spread corn on a baking sheet and roast at 400°F (200°C) for 10–15 minutes, shaking halfway through.
    3. Warm chicken and beans (optional): Heat chicken and black beans in a skillet or microwave until warmed through.
    4. To assemble your bowl, layer the taco cauliflower rice first, then top with cottage cheese, black beans, roasted corn, chicken, cotija cheese, lime juice, and crushed tortilla chips.
    5. Serve and enjoy!

    Notes

    • May add rice or more tortilla chips to the bowl, if you wish.
    • Add any additional herbs or spices such as cilantro or green onions.
    • Meal prep notes: Divide the cooked cauliflower rice, chicken, black beans, and roasted corn into meal prep containers. Top each with cottage cheese, cotija cheese, and a squeeze of lime juice, and store in the fridge for up to ~5 days. Keep crushed tortilla chips separate to add just before eating. Bowls can be enjoyed warm or cold.
