- In a small bowl, whisk the eggs with the cottage cheese until well combined.
- Heat a nonstick skillet over medium heat and scramble the egg mixture until just set and fluffy.
- If eating right away, sprinkle the cheddar cheese over the hot eggs and allow it to melt. If meal prepping, place the cheese directly inside the pita pocket instead.
- Fill the pita pocket with the ham, scrambled eggs, and sliced avocado.
- Enjoy as-is, or warm the assembled pocket using one of the following methods:-Toast in a pan for 1–2 minutes per side-Microwave for about 60 seconds-Air fry for a few minutes at 375°F until warm
