- Spray a skillet with nonstick spray and cook the ground turkey over medium heat until fully cooked. Set aside.
- In a microwave-safe bowl, combine pancake mix, protein shake, and egg until smooth. Fold in the cooked turkey. Optionally, you can add the blueberries here for a one-stop breakfast bowl (it sounds wild but it works!) or save them for later to enjoy on the side.
- Microwave for 2–3 minutes, until set through the center.
- Top with maple syrup and enjoy!
Notes
- To meal prep this, bake the batter into about 4 muffins or into a 9×9-inch pan at 350°F for 20–25 minutes, or cook the turkey ahead of time and assemble fresh bowls during the week for quick breakfasts.
- We prefer a vanilla protein shake, but any flavor will do since you can’t taste it that much.
