    Ingredients
      

    • 2 large hard-boiled eggs chopped
    • ¾ cup cottage cheese
    • ¼ cup pickles chopped
    • medium red onion finely chopped
    • 1 tsp yellow mustard
    • ½ tsp onion powder
    • ½ tsp garlic powder
    • ½ tsp dill
    • ½ oz crackers
    • 1 cup baby carrots

    Directions
     

    1. In a bowl, mix together the chopped hard-boiled eggs, cottage cheese, pickles, red onion, mustard, onion powder, garlic powder, and dill until well combined.
    2. Serve with crackers and baby carrots for scooping. Enjoy!

    Notes

    • To meal prep this, mix the egg salad in advance and store it in an airtight container in the fridge for up to 3–5 days, then portion out crackers and carrots separately when ready to eat.
    • This often tastes even better after sitting in the fridge for a day.
