    1. Heat a small to medium skillet over medium heat and spray with non-stick spray.
    2. In a small bowl whisk eggs and cottage cheese together with a fork. Add to the hot pan and gently cook for ~5-7 minutes or until desired doneness, scrambling the cheesy eggs constantly. Top with feta cheese, remove from heat, and cover to allow the cheese to melt.
    3. Toast bread and top with slices of tomato and eggs. Enjoy!

    Notes

    • Add sliced green onions on top or salsa for extra flair.
    • May sub greek yogurt for the cottage cheese, however it may be a thinner consistency. To combat this you may need to cook your eggs longer.
    • To meal prep: Preheat oven to 375 degree F and spray a muffin tin very well with non-stick spray. Pour your egg mixture into the muffin tin and top with feta. Bake for 20-25 minutes until eggs are set.
