Gingerbread Power Muffins

Directions
- Preheat oven to 350°F and prepare a muffin tin with non-stick spray and/or liners.
- In a mixing bowl, first combine the pancake mix, ginger, cinnamon and nutmeg.
- Then, add your wet ingredients: ¼ cup of the protein shake per serving, egg and molasses. Mix well.
- Divide the batter evenly between muffin cups (1 serving will make 3 muffins)
- Bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool, then enjoy now or save for later!
Notes
- We recommend a vanilla or caramel protein shake but chocolate would be nice too!
- Store in the fridge for up to 5 days or freeze for longer. Reheat in the microwave for 10–15 seconds for a warm satisfying snack.
- You may sub honey or maple syrup or omit the molasses (but will taste less gingerbread-y!)
