Hot Honey Feta Wrap

Crunchy brussels sprouts (which provide fiber) get massaged with apple cider vinegar, honey and feta then piled into a soft tortilla with chicken (for a rich dose of protein)to make a delicious hand-held meal.

- In a medium bowl, combine shaved Brussels sprouts with apple cider vinegar. Massage for 1–2 minutes until slightly softened.
- Toss in 1 tbsp crumbled feta cheese and 1 tsp hot honey. Season with salt, pepper, or other spices if desired.
- Place about half of the Brussels sprouts onto the tortilla (or as many as will fit). Top with cooked chicken.
- Sprinkle the remaining 1 tbsp feta cheese and drizzle 1 tsp hot honey over the chicken. Fold or roll the tortilla.
- Enjoy the remaining Brussels sprouts on the side for extra crunch and nutrients.
Notes
- Brussels sprouts: Swap for shredded cabbage, kale, or broccoli slaw.
- Feta: Substitute goat cheese, ricotta, or shredded mozzarella.
- Hot honey: Swap for sriracha, chili garlic sauce, or a drizzle of maple syrup with a pinch of cayenne.
- Prepare shredded Brussels sprouts in advance and store in an airtight container in the fridge.
