    Ingredients
      

    • 1 tsp olive oil
    • 4 oz ground turkey
    • cup water
    • cup rice dry (~2 tbsp)
    • cup cauliflower rice frozen
    • ½ cup frozen mixed veggies
    • ½ tsp onion powder
    • ½ tsp garlic powder
    • 1 tbsp soy sauce
    • 1 egg
    • 1 green onion

    Directions
     

    1. Heat a pan over medium heat and add olive oil. Brown the ground turkey, then remove from pan and set aside (5–7 minutes).
    2. Add water, rice, frozen cauliflower rice, and mixed veggies to the pan. Bring to a simmer, cover, and cook 15–20 minutes until the rice is tender. If the rice is still undercooked, add a splash of water and cook a few more minutes.
    3. Stir in onion powder, garlic powder, and soy sauce. Crack the egg into the pan and gently fold it in until cooked through.
    4. Add the cooked turkey back to the pan and heat until warmed through.
    5. Top with sliced green onions and serve immediately.

    Notes

    • Great for meal prep—store in an airtight container in the fridge for up to 5 days.
    • Reheat in a pan or microwave until warm.
