Ingredients
  

  • ½ cup plain non-fat Greek yogurt
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 1 tsp Dijon mustard
  • 2 cups raw broccoli chopped
  • 3 oz turkey deli slices diced
  • ¼ red onion chopped
  • block ramen noodles crushed
  • 1 tbsp raisins
  • 1 tbsp sunflower seeds

Directions
 

  1. In a small bowl, whisk together Greek yogurt, apple cider vinegar, sugar, and Dijon mustard until smooth.
  2. In a large bowl, combine broccoli, turkey, red onion, and crushed ramen noodles. Pour the dressing over and toss until everything is evenly coated.
  3. Sprinkle raisins and sunflower seeds on top.
  4. (Optional but recommended) Let the salad sit in the fridge for a few hours to allow flavors to meld and the broccoli and noodles to soften. The salad can be prepped in larger batches—it actually tastes better the next day!

Notes

Protein swap: Chicken breast, cooked tofu, a few chopped hard boiled eggs or some chickpeas work well instead of turkey.
Crunchy swap: Almonds, pumpkin seeds, or crushed whole-grain crackers instead of ramen noodles.
Sweet swap: Dried cranberries, chopped apples, or pomegranate seeds instead of raisins.
Dressing tweak: Honey can replace sugar, or use a bit of lemon juice instead of apple cider vinegar for a brighter flavor.
